Pascal Jolivet Blanc Fumé 2022

Pascal Jolivet produces typical wines, between the Sancerre and Pouilly Fumé appellations, with 50 hectares of vines, plus 50% of the harvest purchased. His family entered the wine business in 1926, starting with wines from the Sancerre region. His philosophy is to let nature express itself as much as possible in order to find it in wines with natural aromas, close to the terroir.

Pascal Jolivet's work highlights the influence of the terroir in the creation of a wine. Each parcel is considered unique, with each one having its own specificity. For example, Blanc Fumé is made from a single grape variety, Sauvignon Blanc, but it is grown on three different soils:

• 50% on limestone soil;
• 30% on flint;
• 20% on clay-limestone soil.
