In 1947, seven well-established and visionary winegrowers came together in a joint quest for ultimate perfection and founded Champagne Palmer & Co. The founders bought the cellars of a Champagne House in Reims in 1959. Over the years, the cooperative has spread past Reims and now owns an impressive 450 hectares of vineyards, over 200 of which are classified Grand and Premier Crus. Uniquely, Palmer are one of the only producers to ferment all champagnes in the bottles they are sold in. In 2015, their range underwent a name change, to now include the term Réserve, which better represents their long ageing periods and inclusion of reserve wines.
Palmer non-vintage champagnes contain a high percent of reserve wines; each spring they blend their non-vintage with about 65% of the wine from the previous harvest and 35% coming from their reserve wines. Each spring when Palmer blend their NV, part of that year's new blend is kept back as still wine for the reserve program. This is added to the reserve stocks for future years blending and although a small amount of older wines would exist in this reserve blend it would be dominated by the previous three to four vintages. This type of reserve wine blend ensures the year on year consistency and extraordinary depth; a similar principle to a "perpetual reserve."
