An eye catching new wine, the name PEMO is a fusion of two historic Abruzzo varieties. PE for Peocrino and MO for Montepulciano. Grown in Abruzzo since 200A.D. these wine are Abruzzo in a glass. Pemo Pecorino is very fresh, zinging with lively citrus acidity, notes of tropical fruits and certain minerality, which gives the wine a lovely balance. Grown on hillside's, all above at least 300 meters to preserve the grapes natural freshness. Once de-steamed the grapes are left in the pneumatic press with dry ice for few hours, then softly pressed with a maximum pressure of 0.5 Atm. The fermentation is completed the wine is left of fine lees for at least 120 days. Very versatile, this Pecorino suits everything from fish too soft, sharp cheeses.
