The wine takes its name from the characteristic ripasso method, in which the grapes are 're-passed', that is, re-fermented on the pomace of Amarone, giving the wine added roundness and depth. The wine is brilliant ruby-red in colour with darkish undertones. The aroma is decisive and persistent, opening with red and blue berries and a light, sombre leathery tone. The palate is dry with a well-toned body, polished tannins and balanced alcohol, which is well expressed in the finale that recalls the fruit and exalts the combination of freshness and maturity. An Good accompaniment to grilled meats and feathered game and absolutely delicious with fresh pasta dishes prepared with flavoursome sauces.
